Final Fantasy XII is the best remaster they had on switch and is the easiest and most modern game you can play. Very easy to get into and very easy to power through. It also has the best value for bucks out of the series. You can spend up to 200 hours on it if you want to do everything.
I would go with Final Fantasy X/X2 Remaster. FF VII, VIII, and IX are all amazing, but I think since you’re coming from XV, the more modern nature of X will be a more seamless transition coming from XV. But, it ultimately comes down to how accepting you are of older games.
