If the minecraft window loses focus when the mouse isn’t already free, it’ll pause the game, however if the mouse is free the game will continue. Hit F11 to go out of full-screen (you need to be in ‘windowed’ mode). Hit ESC to bring up a menu (the mouse pointer will be free so you can click on other stuff). Click on whatever else you wanted to do in Windows.
